Dice the Queso Fresco El Abuelito, and shred the Queso Oaxaca El Abuelito.
In a pot fry the onion, add the milk, and the Queso Cotija El Abuelito. Blend all the ingredients.
Slowly add the cream, so the temperature doesn’t change abruptly. You can also add some of the soup to the cream, so the temperature of the cream rises.
Add the Queso Fresco El Abuelito and the Queso Oaxaca El Abuelito.
Add salt, parsley, walnuts, and grated nutmeg. Let it simmer.
In a pan fry with some oil the remaining parsley.
Serve in a bowl, add some diced walnuts, Queso Fresco El Abuelito and the fried parsley.
