Roast the chiles and tomatoes.

Blend the chiles, tomatoes, epazote and add some salt.

Fry the Longaniza El Abuelito and add the eggs.

Add the salsa to the pan, and depeding on your taste you can let the eggs be cooked thoroughly before adding the salsa or let them cook in it.
